Functions of sugar
Sugar is used mainly in dairy products, confectionery, baked goods, soft drinks and other foodstuffs. They all owe their sweet taste to sugar. But sugar also has other important properties that enhance taste and texture. It adds volume, lightens and softens bread and cake dough and gives baked products their attractive brown finish. Sugar also acts as a preservative to keep products fresh for longer.
